Abstract
I will describe the two constructions in the title and their relationship. Zesting was originally a mathematical construction without a strong physical interpretation. In our search for its physical meaning we defined the condensed fiber product, which generalises zesting in many cases, and can be interpreted in terms of familiar physical constructs such as bi-layer and boson condensation. It also points the way for an even broader generalisation. This is mainly based on joint work with Colleen Delaney, Cesar Galindo, Julia Plavnik and Qing Zhang.
